Abstract
Because of the current scientific and commercial interest on functional foods, the present article reviews the main human health effects described after prebiotics consumption, considerate as functional ingredients. A special attention is paid to the use of non-digestible oligosaccharides (NDO) for being considered as prebiotic components. Within NDO group, fructooligosaccharides, galactooligosaccharides and soybean oligosaccharides have been the components more widely studied and they have shown to have a strong prebiotic effect.
