Abstract
The millenarian presence of caprine and ovine livestock in Spain entails that cheese production has been a widespread custom among the rural population. Nowadays, traditional dairies coexit with modern plants where different varieties of cheese are produced in large quantities. The Spanish government has pledged a firm commitment to ensure the top quality of Spanish cheese by officially granting some brands a "guarantee of origin and quality"; this is leading to an increase in cheese exportation.
